  • 34 pounds chuck roast
  • 4 large yellow or sweet onions, sliced
  • 2 cups low-sodium beef broth
  • 4 sprigs fresh thyme
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300F (150C).
  2. In a Dutch oven, heat oil over medium-high heat and sear the chuck roast on all sides until browned.
  3. Remove the roast and saut sliced onions in the same pot until golden brown (15-20 minutes).
  4. Return the roast to the pot with onions, add beef broth covering half of the meat, thyme sprigs, and balsamic vinegar.
  5. Cover and transfer to the oven; cook for about three hours or until fork-tender.
  6. Let rest briefly before slicing; serve with sauce drizzled on top.
