  • 4 cups chopped baby gold potatoes
  • 21/4 cups mirepoix (diced carrots, celery, onion)
  • 4 cups chicken stock
  • 3 cups milk
  • 1/2 cup heavy cream
  • 2 cups shredded extra-sharp Cheddar cheese
  • Seasonings: garlic, parsley, basil, salt, pepper

Instructions

  1. In a large pot over medium-high heat, cook the Italian sausage until browned. Transfer to a plate.
  2. Saut mirepoix in the same pot until tender; add garlic and cook briefly.
  3. Stir in potatoes and seasonings; add chicken stock and bring to boil. Reduce heat and simmer until potatoes are fork-tender.
  4. In a separate pot, prepare the cream mixture with butter, flour, milk, and heavy cream until thickened.
  5. Combine the cream mixture with the soup; add shredded cheese and cooked sausage. Stir until melted.
  6. Serve warm with buttered bread if desired.
