  • 2 cups medjool dates (pitted)
  • 1 cup unsweetened shredded coconut (divided)
  • 2 tablespoons chocolate chips or dark chocolate pieces (divided)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon almond butter (optional)

Instructions

  1. Preheat oven to 400F and toast shredded coconut on a baking sheet for 5-10 minutes until golden brown.
  2. In a food processor, combine dates, almond butter (if using), 2/3 cup of toasted coconut, 1 tablespoon of chocolate chips, sea salt, and vanilla. Process until a dough forms.
  3. Roll the mixture into 16 small balls using clean hands. Add remaining chocolate chips to the dough before rolling.
  4. Roll each ball in the remaining toasted coconut until fully coated.
  5. Store in an airtight container in the fridge for up to two weeks or freeze for up to three months.
