  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt for garnish

Instructions

  1. Prepare the pie crust and chill in the fridge.
  2. In a medium saucepan, combine cream, brown sugar, cornstarch, and salt; heat until thickened.
  3. Temper the egg yolks with hot cream mixture, then combine back into the saucepan.
  4. Stir in honey and vanilla extract until smooth.
  5. Pour custard into chilled crust and bake at 375F (190C) for 40-45 minutes until set.
  6. Cool at room temperature before refrigerating until chilled.
  7. Sprinkle with flaky sea salt before serving.
