Instructions

  1. In a mixing bowl, combine rice vinegar with sugar and salt until dissolved. Stir this mixture into the cooled sushi rice until evenly incorporated.
  2. Line a baking pan with plastic wrap, transfer the rice mixture to the pan, and press down gently to form an even layer. Cover and refrigerate for at least 4 hours or overnight.
  3. Once chilled, cut the rice into squares or rectangles. Heat vegetable oil in a non-stick pan over medium-high heat and fry the rice pieces until golden brown on each side.
  4. Assemble by topping each crispy rice piece with slices of sushi-grade salmon, a drizzle of Kewpie mayo and Sriracha, and garnishes like avocado and scallions.
