  • 2 Tbsp cornstarch
  • Egg wash (1 beaten egg)

  2. Roll out the dough: Preheat the oven to 425F and roll the chilled dough into a circle on a floured surface. Transfer to a parchment-lined baking sheet.
  3. Make the filling: Toss sliced peaches with sugar, lime juice, cornstarch, and salt. Spoon into the center of the rolled crust and fold edges over.
  4. Bake: Brush with egg wash and bake for about 4045 minutes until golden brown and bubbly.
  5. Glaze: Mix apricot preserves with water, brush over cooled tart, then slice and serve.
