Ingredients

  • Unsalted butter
  • Active dry or instant yeast
  • Granulated sugar
  • Lukewarm milk
  • All-purpose flour
  • Egg
  • Pumpkin puree
  • Salt
  • Dried rosemary
  • Ground cardamom

Instructions

  1. Prepare brown butter by melting unsalted butter in a light-colored pan over medium heat until golden brown and nutty in aroma. Set aside to cool.
  2. In a stand mixer bowl, combine active dry yeast, granulated sugar, and lukewarm milk; let it foam for 510 minutes.
  3. Add cooled brown butter, all-purpose flour, egg, pumpkin puree, salt, dried rosemary, and cardamom; knead on medium-low speed for 2025 minutes until dough is smooth.
  4. Allow the dough to proof in a covered bowl until doubled in size (about 4560 minutes).
  5. Divide the dough into eight equal pieces; shape into balls and place in a greased baking tin. Let them proof again for another 4560 minutes.
  6. Preheat the oven to 375F (190C). Brush rolls with an egg wash made from beating an egg with milk before baking for 2025 minutes until golden brown.
  7. Cool slightly before serving warm.
