  • 1 small zucchini, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs (or oregano/thyme)
  • Salt and black pepper to taste
  • Optional: crumbled feta or grated parmesan

Instructions

  1. Preheat the oven to 425F (220C).
  2. Toss zucchini, bell peppers, cherry tomatoes, and red onion in a bowl with olive oil, herbs, salt, and pepper. Spread on a lined baking sheet.
  3. Roast vegetables for 2025 minutes until caramelized and tender.
  4. Meanwhile, boil salted water in a large pot and cook the orzo according to package directions until al dente. Drain and set aside.
  5. In a large mixing bowl, combine the cooked orzo with roasted vegetables, lemon juice, and parsley. Toss gently.
  6. Serve warm or chilled as desired; top with optional cheese.
