  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 1 cup fresh basil (roughly chopped)
  • 2 cups chicken stock
  • 2/3 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375F.
  2. Arrange tomato halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 1 hour until caramelized.
  3. In a large pot, heat remaining oil over medium-high heat. Saut diced onion for about 5 minutes until translucent.
  4. Add minced garlic and saut for another minute.
  5. Stir in crushed tomatoes, chopped basil, sugar, and simmer for about 10 minutes.
  6. Incorporate roasted tomatoes and chicken stock; let simmer for an additional 30 minutes.
  7. Blend the soup until smooth using an immersion blender or regular blender.
  8. Mix in heavy cream and adjust seasoning if needed before serving hot.
