  • 12 ounces pasta (spaghetti, penne, or fusilli)
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil for garnish
  • Optional: Grated Parmesan cheese

Instructions

  1. Preheat oven to 400F (200C).
  2. Arrange halved cherry tomatoes on a baking sheet. Drizzle with olive oil and season with salt, pepper, and minced garlic. Roast for about 20 minutes until soft and caramelized.

  4. Combine roasted tomatoes with the cooked pasta in a mixing bowl. Stir in ricotta until well mixed.
