Ingredients

  • 2 medium sweet potatoes
  • 2 bunches of kale
  • 1 cup cooked quinoa
  • 1/2 cup chopped pecans
  • 1/4 cup crumbled goat cheese
  • Dried cranberries
  • Dijon mustard

Instructions

  1. Preheat oven to 400F (200C).
  2. Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for about 25 minutes until tender and browned.

  5. Add roasted sweet potatoes once cooled slightly.
