  • 1 cup shredded mozzarella cheese
  • ½ cup roasted red peppers, chopped
  • 2 tablespoons fresh basil, chopped
  • Olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine mozzarella cheese, roasted red peppers, basil, and optional red pepper flakes.
  3. Slice pockets into each chicken breast and season inside and out with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  4. Fill each pocket with the cheese mixture; secure openings with toothpicks.
  5. Heat olive oil in an oven-safe skillet over medium-high heat; sear chicken for 2–3 minutes on each side until golden brown.
  6. Add minced garlic to the skillet for 30 seconds; deglaze with chicken broth and balsamic vinegar.
  7. Bake in the preheated oven for 18–22 minutes until the internal temperature reaches 165°F (75°C). Let rest before slicing.
