  • 2 tablespoons olive oil (divided)
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • Honey
  • Fresh basil (for garnish)
  • Dried thyme
  • Dried oregano
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and pepper until evenly coated.
