  • 4 boneless, skinless chicken breasts (about 600g)
  • Juice and zest of 2 large fresh oranges
  • 4 garlic cloves (minced)
  • 1/4 cup honey (85g)
  • 1/4 cup low-sodium soy sauce (60ml)
  • 2 tbsp extra virgin olive oil (30ml)
  • 1 tbsp fresh ginger (grated)

Instructions

  1. Preheat the oven to 400F (200C) and spray a baking dish with nonstick cooking spray.
  2. In a mixing bowl, whisk together the orange juice and zest, honey, soy sauce, minced garlic, grated ginger, and olive oil until thoroughly combined.
  3. Place the chicken in a zip-top bag or shallow dish and pour the marinade over it. Seal or cover and marinate for at least 30 minutes.
  4. Transfer the marinated chicken to the prepared baking dish. Reserve any leftover marinade. Bake uncovered for 25-30 minutes until cooked through; ensure the internal temperature reaches 165F.
  5. While baking, simmer the reserved marinade in a saucepan over medium heat until thickened (about 10 minutes). Drizzle this sauce over the cooked chicken before serving.
