  • 1/4 cup + 2 tablespoons extra-virgin olive oil
  • 2 pounds green beans, trimmed
  • Kosher salt
  • 2 to 3 teaspoons white balsamic vinegar or preferred vinegar
  • Flaky sea salt

Instructions

  1. Preheat the oven to 450F (convection roast if available).
  2. Thinly slice shallots until you have about 2 cups.
  3. In a cast iron skillet, heat 1/4 cup olive oil over high heat. Add sliced shallots; stir briefly then reduce heat to low. Cook for 25-30 minutes until deep amber. Transfer shallots to a paper towel-lined plate and season with flaky sea salt.
  4. Place trimmed green beans on a rimmed baking sheet; toss with remaining olive oil and kosher salt. Spread evenly.
  5. Roast for about 15 minutes (10 minutes if using only 1 pound), stirring midway until charred at edges and crisp-tender.
  6. Remove from oven and toss with vinegar. Adjust seasoning as needed, then transfer to a serving platter, topping with caramelized shallots.
