  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400F. Line a baking sheet with parchment paper and spread halved cherries on it; sprinkle with sugar and roast for 10 minutes.
  2. Lower the temperature to 325F. Prepare an 8X8 pan with non-stick spray and parchment paper.
  3. In a bowl, sift flour, cocoa powder, cornstarch, and salt together.
  4. In a mixer, beat sugar, eggs, and egg yolk until fluffy. Add melted butter, oil, and vanilla; mix until combined.
  5. Gently fold in dry ingredients with a rubber spatula.
  6. Mix in half of the roasted cherries and chocolate chips into the batter.
  7. Pour the batter into the prepared pan and bake for 40-50 minutes.
  8. After baking, cool completely before adding remaining roasted cherries on top.
