  • 5 cups broccoli florets
  • 1 large shallot
  • 1/2 cup parsley
  • 1/2 cup slivered almonds
  • Dressing: olive oil
  • lemon juice
  • dijon mustard
  • garlic
  • salt
  • pepper

Instructions

  1. Preheat oven to 425F. Line a baking dish.
  2. Rinse quinoa under cold water; cook in a pot with 1 cups water as per package instructions.
  3. In the baking dish, toss broccoli florets and sliced shallot with olive oil, salt, and pepper. Roast for 18-20 minutes until crispy.
  4. For the dressing, combine olive oil, lemon juice, dijon mustard, crushed garlic, salt, and pepper in a small jar; shake well.
  5. In a bowl, mix cooked quinoa with roasted vegetables, parsley, and almonds; drizzle with dressing and mix gently.
