  • 4 thick-cut bacon slices, chopped
  • 1/4 cup honey
  • 3 tablespoons apple cider vinegar
  • 4 ounces goat cheese, crumbled
  • 1 cup pomegranate arils
  • 3 tablespoons extra virgin olive oil
  • kosher salt and black pepper
  • 1 pinch crushed red pepper flakes
  • 2 tablespoons salted butter
  • 1 teaspoon fresh orange zest

Instructions

  1. Preheat your oven to 425F (220C) and prepare a rimmed baking sheet.
  2. Toss the halved brussels sprouts with olive oil, kosher salt, and black pepper. Arrange them cut side down on the baking sheet and scatter chopped bacon around them.
  3. Roast in the oven for 20-25 minutes until deeply browned and the bacon is crisp.
  4. Meanwhile, prepare the honey glaze by boiling honey and crushed red pepper flakes in a small saucepan for one minute. Remove from heat and stir in apple cider vinegar, salted butter, orange zest, and a pinch of salt.
  5. Drizzle the honey glaze over the roasted sprouts upon removal from the oven. Top with crumbled goat cheese and pomegranate arils before serving warm.
