  • 6 tbsp unsalted butter, room temperature
  • 2 tbsp vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 3/4 cup buttermilk
  • 1 1/4 cups unsalted butter, room temperature
  • 5 cups powdered sugar
  • 1 1/4 tsp vanilla extract
  • 12 tbsp water or cream
  • Red gel icing color
  • Blue gel icing color
  • Sprinkles, optional

Instructions

  1. Preheat the oven to 350F (176C) and line a cupcake pan with liners.
  2. Mix dry ingredients: flour, baking powder, and salt in one bowl.
  3. In another bowl, cream together butter, oil, and sugar until fluffy. Add eggs and vanilla.
  4. Alternate adding dry ingredients and buttermilk to the mixture until combined.
  5. Divide batter into three bowls; color two with red and blue gel icing.
  6. Layer colored batter into cupcake liners and bake for 15-20 minutes until done.
  7. Cool cupcakes completely before frosting.
