  • 1/2 gallon vanilla ice cream
  • 1 box white cake mix (15.5 oz)
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 2 tsp strawberry extract
  • 4 large egg whites
  • Red and blue gel food coloring
  • 1 pint heavy cream
  • 1/2 cup powdered sugar

Instructions

  1. Soften the vanilla ice cream at room temperature for about 5-10 minutes. Line an 8 or 9-inch round pan with plastic wrap, leaving an overhang. Scoop softened ice cream into the pan and freeze for at least 4 hours.
  2. Preheat your oven to 350F (175C). Prepare two cake pans with baking spray.
  3. Mix together the cake mix, buttermilk, vegetable oil, strawberry extract, and egg whites until combined.
  4. Divide batter into two bowls; color one red and the other blue using food coloring.
  5. Pour each batter into prepared pans and bake for 18-20 minutes until a toothpick comes out clean. Let cool completely.
  6. Assemble by layering the blue cake on the bottom, followed by the frozen ice cream layer, then top with the red cake layer.
  7. Whip heavy cream with powdered sugar until stiff peaks form; frost the top and sides of your layered cake.
  8. Freeze for an additional two hours before serving.
