  • 500 g frozen raspberries
  • 100 g granulated sugar
  • 1 tbsp lemon juice
  • 120 g water
  • 450 g mascarpone cheese
  • 100 g granulated sugar
  • 120 g powdered sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla paste
  • 480 g heavy cream
  • 25 ladyfinger cookies
  • 3 tbsp limoncello (optional)
  • 30 g frozen raspberries for garnish
  • Fresh raspberries and lemon slices for decoration

Instructions

  1. Prepare the raspberry jam by simmering frozen raspberries, sugar, lemon juice, and water in a saucepan for about 10 minutes until it thickens. Cool completely.
  2. In a mixing bowl, combine cold mascarpone cheese with granulated sugar and lemon juice. In another bowl, whip heavy cream until stiff peaks form and fold it into the mascarpone mixture.
  3. Quickly dip ladyfingers in the cooled raspberry jam and layer them in a baking dish. Spread half of the mascarpone cream over the ladyfingers; repeat with another layer.
  4. Cover and refrigerate for at least 4 hours or overnight before serving. Garnish with fresh raspberries and lemon slices.
