  • 2 cups quinoa
  • 4 cups vegetable broth
  • 4 medium sweet potatoes
  • 2 bunches kale
  • 1 cups cooked chickpeas
  • cup tahini
  • cup maple syrup
  • Olive oil
  • Smoked paprika
  • Garlic
  • Cranberries or pomegranate seeds
  • Pumpkin seeds

Instructions

  1. Preheat oven to 400F (200C).
  2. Toss cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 2530 minutes.
  3. In a medium pot, bring vegetable broth to boil. Add rinsed quinoa, cover, and simmer until fluffy.
  4. Saut minced garlic in a skillet with olive oil; add chopped kale and cook until wilted.
  5. Whisk tahini, maple syrup, apple cider vinegar, salt, and warm water until smooth.
  6. Assemble bowls by layering quinoa, roasted sweet potatoes, sauted kale, chickpeas, cranberries (or pomegranate seeds), and pumpkin seeds. Drizzle with dressing.
