  • 4 boneless, skinless chicken breasts (1 lb)
  • 2 tbsp extra virgin olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 medium red onion, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper and add them to the skillet.
  2. Sear chicken for about 6 minutes on each side until golden brown and fully cooked. Remove from skillet and set aside.
  3. In the same skillet, add more olive oil if needed; sauté bell peppers, zucchini, and red onion for about 5 minutes until tender yet crisp.
  4. Stir in minced garlic and canned tomatoes; simmer for 3-4 minutes.
  5. Return the chicken to the skillet; warm through while combining with vegetables.
  6. Serve hot, garnished with fresh herbs if desired.
