  • 1 cup napa cabbage (chopped)
  • 1 cup red bell pepper (julienned)
  • cup snow peas
  • cup carrot (julienned)
  • 4 button mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1 tablespoon vegetable oil (or any neutral oil)
  • 2 tablespoons regular soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce (or vegetarian stir fry sauce)
  • 1 tablespoon sesame oil

Instructions

  1. Prepare the sauce by mixing soy sauce, oyster sauce, and sesame oil in a bowl; set aside.
  2. Soak the lo mein noodles in boiling water for 15-20 seconds until loosened.
  3. Drain the noodles without rinsing them to preserve their texture.
  4. Heat vegetable oil in a wok or large skillet over medium-high heat. Stir-fry carrots, bell pepper, snow peas, mushrooms, and napa cabbage for 1-2 minutes.
  5. Reduce heat to medium and add the drained noodles along with the prepared sauce; toss until combined.
  6. Serve hot, garnished with green onions.
