  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, peeled and chopped
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar

Instructions

  1. Wash and pat dry the chicken breasts. Optionally, cut them into smaller pieces for quicker cooking.
  2. In a bowl, mix together the soy sauce, brown sugar, minced garlic, ginger, and rice vinegar until well combined.
  3. Place the chicken in the crock pot and pour the teriyaki sauce over it, ensuring all pieces are coated.
  4. Cover and cook on low for 6 hours or high for 3 hours until the chicken reaches an internal temperature of 165°F (74°C).
  5. Shred the cooked chicken with two forks and return it to the pot. Serve immediately.
