  • 4 cups cooked jasmine rice (cold, day-old)
  • lb skinless boneless chicken thighs (thinly sliced)
  • 1.5 cups frozen peas and carrots
  • 3 large eggs (beaten)
  • 3 garlic cloves (minced)
  • Soy sauce and sesame oil (for flavor)

Instructions

  1. Marinate sliced chicken thighs in a medium bowl with marinade ingredients for 510 minutes.
  2. In a small bowl, mix all sauce ingredients and set aside.
  3. Heat 1 tsp vegetable oil in a large pan over medium-high heat; cook marinated chicken until fully cooked.
  4. Add another tsp of oil, saut minced garlic and diced shallots for 10 seconds, then add frozen peas and carrots.
  5. Push veggies to one side, add remaining oil, and scramble the beaten eggs until cooked.
  6. Combine cooked rice and chicken back into the pan; mix well.
  7. Pour the pre-prepared sauce around the rice edges; toss everything until evenly coated.
