  • 4 cups shredded zucchini (about 3.5 medium zucchinis)
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped onion
  • 1 tablespoon minced garlic (about 3 cloves)
  • 2 large eggs
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted salted butter

Instructions

  1. Preheat your oven to 375F (190C).
  2. Grate the zucchini, place it in a bowl with salt, and let it sit for 5 minutes. Squeeze out excess moisture using a towel.
  3. In the same bowl, combine drained zucchini with onion, garlic, eggs, cheeses, and panko breadcrumbs until fully mixed.
