  • 4 oz cream cheese
  • 2 tbsp unsalted butter
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350F (175C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in pumpkin puree, egg yolk, and vanilla until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, and spices.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Scoop dough onto prepared sheets and bake for 1012 minutes until edges are set.
  7. Cool cookies on a wire rack while you prepare the frosting by beating cream cheese and butter until smooth; then mix in powdered sugar and vanilla.
  8. Once cooled completely, frost cookies generously.
