  • 1 3/4 cups all-purpose flour
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 3/4 cup buttermilk
  • 2 eggs
  • 1 tbsp pumpkin pie spice
  • Brown sugar (for streusel topping)
  • 6 tbsp unsalted butter, cold
  • 1 cup brown sugar (for streusel topping)
  • 1 cup all-purpose flour (for streusel topping)
  • 1/4 tsp salt (for streusel topping)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350F (175C) and grease a muffin tin or line with paper liners.
  2. In a bowl, combine cold butter, brown sugar, flour, and salt for the streusel topping; mix until crumbly.
  3. In a large bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In another bowl, mix melted butter, sugar, eggs, vanilla extract, pumpkin puree, and buttermilk until smooth.
  5. Fold wet ingredients into dry ingredients until just combined; avoid overmixing.
  6. Fill muffin cups two-thirds full with batter and top with streusel mixture.
  7. Bake for about 20 minutes until a toothpick comes out clean. Cool before serving.
