  • cup packed light brown sugar
  • 2 tbsp pumpkin puree
  • cup warm water
  • Cold oat milk, to taste
  • Ice cubes

Instructions

  1. In a small saucepan, whisk together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water until combined.
  2. Simmer on low heat for 2-3 minutes until thickened.
  3. Remove from heat, add vanilla extract (and maple extract if desired), then strain through a fine sieve if preferred.
  4. In a sealable jar, combine one double shot of espresso with 1-2 tablespoons of syrup and ice cubes. Shake vigorously for 20-30 seconds.
  5. Pour the mixture into a glass (discarding any ice), add fresh ice cubes, and top with cold oat milk to your liking.
  6. Dust with pumpkin pie spice before serving.
