  • cup brown sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • cup pumpkin puree
  • ? cup coarse sugar for rolling
  • 1 large egg
  • cup brown sugar
  • pinch table salt
  • cup whole milk
  • teaspoon vanilla extract
  • whipped cream for serving (optional)

Instructions

  1. Preheat the oven to 350F (175C) and line a cookie sheet with parchment paper.
  2. In a mixing bowl, cream together butter, cream cheese, granulated sugar, and brown sugar until fluffy. Add egg yolk and vanilla extract.
  3. In another bowl, whisk flour, pumpkin spice, and salt; gradually add to the wet ingredients until combined.
  4. Shape dough into one-inch balls, roll in coarse sugar, and place on the prepared sheet.
  5. Bake for about 15 minutes until edges are golden but centers remain soft.
  6. Mix remaining ingredients (pumpkin puree, milk, additional brown sugar) for the filling once cookies cool slightly.
  7. Assemble by placing filling between two cookies.
