  • 2 cups whole milk
  • 4 eggs (yolks separated from whites)
  • 1 1/2 cups confectioners sugar

  • 1 cup pumpkin puree (not pie filling)
  • 1 cup all-purpose flour

Instructions

  2. Line an 8×8 or 9×9-inch baking dish with parchment paper.
  3. Warm the milk until lukewarm and set aside.
  4. Beat egg whites with a pinch of cream of tartar until stiff peaks form.
  5. Melt the butter and let cool.
  6. In another bowl, beat egg yolks with confectioners sugar until pale; add vanilla, spices, and melted butter.
  7. Mix in flour and pumpkin puree, then gradually add warm milk, stirring until smooth.
  8. Gently fold in beaten egg whites.
  9. Pour batter into the prepared dish and bake for 60-65 minutes or until set.
  10. Cool completely before refrigerating; serve chilled.
