  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat's cheese
  • cup single dairy cream
  • 50g mozzarella or cheddar cheese
  • 6g sage leaves
  • 400ml vegetable stock
  • 30g pecans

Instructions

  1. Preheat your oven to 200C (392F).
  2. In a pot, cook the diced pumpkin with vegetable stock over medium heat until tender (1015 minutes). Drain excess liquid.
  3. Boil water in another pot and add gnocchi; cook until they float, then drain.
  4. In a large bowl, combine cooked pumpkin, gnocchi, cream, blue cheese (or goat's cheese), sage leaves, and half of the mozzarella/cheddar. Stir gently.
  5. Transfer to a baking dish, top with remaining cheese and sprinkle with pecans. Bake for about 20 minutes until golden brown.
