  • 360 g pasta shells
  • 1 kg butternut squash pumpkin, cubed
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200C (400F).
  2. In an oven-safe dish, combine cubed pumpkin, garlic (in skins), thyme, olive oil, salt, and pepper.
  3. Nestle feta cheese in the center of the dish and drizzle with more olive oil.
  4. Roast for 25 minutes until pumpkin is tender.
  5. Cook pasta in salted water during the last 10 minutes of roasting.
  6. Once roasted, mash garlic and combine with feta; add cooked pasta and spinach.
  7. Mix together until creamy; adjust consistency with reserved pasta water if needed.
  8. Serve topped with chili flakes and walnuts.
