  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter, melted, plus more for pan
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. Combine flour, sugar, salt, spices, milk, pumpkin puree, eggs, melted butter, and vanilla in a blender and process until smooth. Let rest for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and lightly grease with butter. Pour about cup batter into the pan; swirl to coat evenly.
  3. Cook for 1-1 minutes until golden on the bottom; flip and cook for another minute. Transfer to a plate.
  4. Repeat with remaining batter.
  5. Prepare filling by mixing softened cream cheese, confectioners' sugar, and maple syrup until smooth. Fill each crepe as desired and serve immediately.
