  • 4 mini pumpkins (or ramekins)
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 325F (160C).
  2. Prepare mini pumpkins by cutting off tops and scooping out seeds; place upright in a baking dish.
  3. In a saucepan, combine heavy cream and half the sugar; heat until simmering. Remove from heat and stir in vanilla, spices, and salt.
  4. Whisk egg yolks in a bowl until light; gradually add the hot cream mixture while whisking.
  5. Fold in pumpkin puree until well combined.
  6. Pour custard into prepared vessels until three-quarters full.
  7. Place filled containers in a larger baking dish; add hot water until halfway up the sides of the containers.
  8. Bake for about 30 minutes or until set but slightly jiggly in the center.
  9. Chill for at least two hours before caramelizing sugar on top using a kitchen torch.
