  • 2/3 cup Libby's Pumpkin Puree
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 1 2/3 cup all-purpose flour
  • 2 1/2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350F (180C) and line two baking trays with parchment paper.
  2. Brown the cold butter in a large pan over medium heat until its golden brown with a nutty aroma. Let cool slightly, then transfer to a bowl and chill for about an hour.
  3. Prepare the pumpkin puree by patting it dry to remove excess moisture.
  4. Whisk the cooled browned butter with sugars until combined, then add egg yolks, vanilla, and pumpkin puree.
  5. Fold in flour, pumpkin spice, baking soda, salt, and chocolate chips until just mixed.
