  • 1 cup sun-dried tomatoes
  • 5 cloves garlic (minced)
  • 68 sage leaves
  • 1 cups pumpkin puree
  • 2 cups low sodium chicken broth (or vegetable broth)
  • 1 teaspoon dried basil
  • teaspoon ground cinnamon
  • 1 lb lean ground beef (or ground turkey, chicken or lentils)
  • 1 medium onion (diced small)
  • 2 big carrots or 12-15 baby carrots (diced small)
  • 3 celery stalks (diced small)
  • ? cup dry white wine
  • 1 cup crushed tomatoes (no salt added preferred)
  • 1 cup milk of choice
  • Ground black pepper (to taste)
  • 1 lb pasta
  • Parmesan cheese (for garnish)

Instructions

  1. In a medium pot, heat olive oil over medium heat. Saut sun-dried tomatoes, garlic, and sage until fragrant.
  2. Stir in pumpkin puree, broth, basil, and cinnamon; simmer for 15 minutes.
  3. In a large pot, brown ground meat; drain excess liquid.
  4. Saut diced onion, carrots, and celery in the same pot until soft.
  5. Deglaze with white wine; add crushed tomatoes and blended pumpkin mixture.
  6. Stir in milk and season to taste; let simmer for 30 minutes or until thickened.
  7. Cook pasta according to package instructions; serve topped with the sauce.
