  • 8 oz Pappardelle pasta (or fettuccine)
  • 8 oz canned pumpkin
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup grated Parmesan cheese
  • 2 tbsp salted butter
  • 45 fresh sage leaves (or 1/2 tsp ground sage)
  • 1 tbsp minced garlic (or 1/2 tsp garlic powder)
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions in a large pot of salted water until al dente.
  2. In a saucepan over medium heat, melt butter and saut minced garlic until fragrant (about 30 seconds).
  3. Stir in heavy cream and whole milk; whisk in canned pumpkin and Parmesan cheese until smooth.
  4. Add chopped sage leaves and nutmeg; simmer for about 5 minutes.
  5. Drain pasta and add it to the sauce; toss gently to coat all noodles.
  6. Serve hot, garnished with extra Parmesan or sage if desired.
