  • 6 to 8 mini pumpkins
  • 12 ounces fettuccine or spaghetti
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice tops off mini pumpkins and scoop out seeds. Brush interiors with olive oil and season.
  3. Place pumpkins cut-side up on a baking sheet and roast for 25–30 minutes until tender.
  4. Cook pasta in salted boiling water until al dente; drain.
  5. In a saucepan, melt butter over medium heat and sauté garlic until fragrant. Add heavy cream and gradually stir in Parmesan cheese until thickened; season to taste.
  6. Toss cooked pasta in Alfredo sauce until fully coated.
  7. Fill each pumpkin with the pasta mixture and garnish as desired.
