  • 1 tbsp avocado oil
  • 1 yellow onion (diced)
  • 2 celery stalks (diced)
  • 1 medium carrot (diced)
  • 3 garlic cloves (minced)
  • 1 lbs yellow potatoes (peeled and diced in 1-inch cubes)
  • 4 cups vegetable broth
  • 1 tsp salt
  • tsp black pepper
  • cup 2% milk
  • cup heavy cream
  • 1 cup cottage cheese
  • cup shredded cheddar cheese

Instructions

  1. In a large pot, heat avocado oil over medium heat. Saut diced onion, celery, and carrot for 34 minutes until onion is translucent. Add minced garlic and saut for another minute.
  2. Stir in diced potatoes, vegetable broth, salt, and pepper. Bring to a simmer, cover, and cook for 15 minutes until potatoes are fork-tender.
  3. Remove from heat; stir in milk, heavy cream, and cottage cheese. Blend the mixture until smooth using an immersion blender.
  4. Return to low heat; gradually add shredded cheddar cheese until melted and smooth. Serve hot with desired toppings.
