  • 1 lb ground pork
  • 8 oz stir fry rice noodles
  • 14 oz coleslaw mix
  • 1/2 cup gluten-free Tamari (or soy sauce)
  • 4 cloves garlic
  • 1 tablespoon ginger paste
  • 1 tablespoon sesame oil

Instructions

  1. Prepare the pork mixture by combining ground pork, pepper, and 1 tablespoon of Tamari in a mixing bowl.
  2. In another bowl, whisk together the remaining Tamari, chicken broth (or water), rice vinegar, ginger paste, sesame oil, and optional red chili flakes.
  3. Cook rice noodles according to package instructions; drain and rinse under cold water.
  4. In a hot wok or skillet, cook the pork mixture until browned. Add coleslaw mix and green onions; stir-fry until tender. Stir in garlic and cook for an additional minute.
  5. Incorporate the drained noodles and sauce into the wok; stir-fry until everything is heated through.
  6. Allow to cool slightly before serving.
