  • 2 medium potatoes (peeled and diced)
  • 2 tablespoons olive oil
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 4 large eggs
  • 1 cup fresh spinach (chopped)
  • cup milk (or plant-based milk)
  • Salt and pepper to taste
  • Optional: cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375F (190C).
  2. In a cast iron skillet, heat olive oil over medium heat. Saut onion until translucent, about 5 minutes.
  3. Add minced garlic and diced potatoes; cook until tender, about 1015 minutes.
  4. Stir in chopped spinach until wilted.
  5. In a mixing bowl, whisk together eggs, milk, salt, and pepper; pour over the veggies in the skillet.
  6. Cook on medium heat until edges set (about 5 minutes). If using Parmesan cheese, sprinkle on top.
  7. Transfer skillet to preheated oven and bake for about 15 minutes or until fully set.
