  • 2 cups all-purpose flour
  • 1 cup cold butter (diced)
  • cup ice water
  • 1 lb potatoes (peeled and diced)
  • 1 lb ground pork
  • 2 cups chopped leeks
  • 3 garlic cloves (minced)
  • Fresh herbs: thyme and sage
  • Grainy mustard

Instructions

  1. Prepare the crust by mixing flour and salt in a bowl. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Chill for at least 30 minutes.
  2. In a skillet, heat olive oil over medium heat. Saut diced potatoes for about 10 minutes until slightly tender; remove from skillet.
  3. In the same skillet, cook ground pork until browned. Add leeks, garlic, herbs, nutmeg, pepper, and half of the kosher salt; cook until leeks are soft.
  4. Combine cooked potatoes with the pork mixture and stir in grainy mustard.
  5. Preheat oven to 400F (200C). Roll out half of the chilled dough to fit your pie dish, fill with the mixture, then cover with remaining dough and seal edges.
  6. Brush with beaten egg and cut slits for steam before baking for about 4550 minutes until golden brown.
