  • 1/2 cup granulated sugar (100g)
  • 2 cups all-purpose flour (250g)
  • 1 cup shelled pistachios (120g)
  • 4 oz dark chocolate (113g)

Instructions

  1. In a mixing bowl, soften the room-temperature butter.
  2. Add granulated sugar and mix until combined.
  3. Gradually incorporate all-purpose flour until clumps form; use hands to create a smooth dough.
  4. Fold in chopped pistachios, reserving some for topping.
  5. Shape into a log, wrap in plastic wrap, and chill for one hour.
  6. Preheat oven to 340F (170C) and line a cookie sheet with parchment paper.
  7. Slice chilled dough into rounds about 1/2 inch thick and place on the prepared sheet.
  8. Bake for 12-18 minutes until edges are golden brown; cool on the sheet for 10 minutes before transferring to a rack.
  9. Melt dark chocolate and dip cookies halfway; sprinkle with reserved pistachios.
