  • 1 1/2 cups shredded unsweetened coconut flakes
  • 1 1/2 cups skinned pistachios
  • 1/2 cup granulated sugar
  • 1 1/2 tbsp cornstarch
  • 1 1/2 tsp rosewater (or vanilla extract)
  • 1 egg
  • 1 egg white
  • Pinch salt
  • 9 oz dark chocolate

Instructions

  1. Preheat oven to 325F. If using dried coconut flakes, rehydrate them.
  2. In a food processor, pulse skinned pistachios into fine crumbs.
  3. In a bowl, whisk together beaten eggs and combine with coconut flakes, pistachio crumbs, sugar, cornstarch, rosewater, and salt.
  4. Scoop tablespoonfuls onto a lined baking sheet to form mounds.
  5. Bake for 25-30 minutes until light golden brown; cool on the sheet.
  6. Melt dark chocolate and dip cooled macaroons in it; allow to set.
