  • 1 red bell pepper, cut into 1-inch pieces
  • 3/4 cup pineapple juice
  • 1/4 cup low sodium soy sauce
  • 1/3 cup hoisin sauce
  • 2 teaspoons corn starch
  • Minced garlic and ginger for flavor

Instructions

  1. Heat vegetable oil in a large pan over medium-high heat.
  2. Season chicken with salt and pepper; add to the pan and cook until fully cooked (6-8 minutes).
  3. Add red bell pepper and pineapple; cook until tender (4-5 minutes).
  4. Stir in minced garlic and ginger; cook for another 30 seconds.
  5. In a small bowl, whisk together pineapple juice, soy sauce, hoisin sauce, and brown sugar; pour into the pan.
  6. Bring to a simmer; mix corn starch with cold water until smooth; add to the pan while stirring.
  7. Cook until thickened slightly; garnish with sesame seeds and sliced green onions before serving.
