  • 6 oz mushrooms (chopped)
  • ½ lb cheesesteak beef (thinly sliced)
  • ½ red bell pepper (diced)
  • ½ green bell pepper (diced)
  • ½ onion (chopped)
  • 1 tsp garlic (minced)
  • 1 large flour tortilla
  • 3 slices provolone cheese (halved)
  • 2 tsp mayonnaise
  • Olive oil, salt, and pepper to taste

Instructions

  1. Heat 2 tsp olive oil in a skillet over medium-high heat. Cook the beef until browned; season with salt and pepper. Drain excess grease and set aside.
  2. In the same skillet, add another teaspoon of olive oil and sauté onions, peppers, and mushrooms until softened.
  3. Return the beef to the skillet with minced garlic; combine well and cook for an additional minute.
  4. Spread mayonnaise on one side of each tortilla. Fill half with the beef mixture and top with provolone cheese before folding.
  5. Heat one teaspoon of olive oil in a clean skillet over medium heat. Cook each quesadilla until golden brown on both sides and cheese melts.
  6. Slice into wedges and serve warm.
