  • 1 lb large shrimp, peeled and deveined
  • 8 oz mushrooms, sliced
  • 1 cup fresh basil pesto
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve some pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for 30 seconds until fragrant. Add sliced mushrooms and cook for about 3–4 minutes until softened.
  3. Add shrimp to the skillet, season with salt, pepper, and red pepper flakes (if using), and cook until shrimp are pink (about 3–5 minutes).
  4. Reduce heat to low; stir in cooked pasta and basil pesto until well combined. Add reserved pasta water as needed for creaminess.
