  • 1 cup + 2 tablespoons granulated sugar
  • 2 tablespoons light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 1/4 cups white chocolate chips
  • 6 tablespoons crushed peppermint pieces

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the butter with granulated and brown sugars until fluffy.
  4. Add the egg, vanilla extract, and peppermint extract; mix until combined.
  5. Gradually add the dry ingredients into the wet mixture until just combined.
  6. Fold in white chocolate chips and crushed peppermint using a rubber spatula.
  7. Scoop dough into balls (about 1½ tablespoons each) and place on prepared baking sheets.
